Collards are an old Florida favorite. It is not only a hardy plant, surviving extreme heat and cold, but begin harvesting within 2 months of planting. Never harvest any more than 1/3 of the plant at any given time. Harvest outside leaves first, then work in toward the center. Always remember, the cooler the temperatures, the better tasting your greens are sure to be!
